Traditionally distilled using Irish methods and matured in select Ex-Bourbon casks, this is one of the first ever triple-distilled pot still whisky spirits outside of Ireland. If you enjoyed our Oaken Poitín, you’ll also love this spirit. The Darach Poitín shares the same incredibly smooth new-make spirit base, but the Ex-Bourbon wood provides a wide range of delicate and balanced flavours which allow the connoisseur to appreciate the true nature of the spirit type. Whiskymaker Dr. Graeme Macaloney studied the pot still process in Ireland before recreating it here on Vancouver Island. He then overlaid the maturation expertise learned from the legendary Dr. Jim Swan.
Nose: A perfumed bouquet of carnations, rose water, cream soda, and malt open up to a medley of of ripe papaya, lychee, and light tangerine, before progressing to notes of white-chocolate, biscuit, and gentle sea breeze.
Palate: Silky on the palate, with deepening tropical fruit, sultanas, honey, and malted milk, developing into light roast coffee, pinewood, and green apples, before ending with a hint of salt & a lingering oak wood finish.
